Himi Udon from Kaizuya is a beloved regional specialty from Himi City, Toyama Prefecture, Japan. The thin noodle variety (hosomen) is the brand's most popular style, combining the firm chew of hand-kneaded dough with the smooth, silky finish of hand-stretching — qualities that are rarely achieved together in a single noodle.
- Firm yet smooth: A unique production method delivers both a satisfying bite (koshi) and a clean, slippery mouthfeel (nodo-goshi).
- Fine air bubbles: Visible in the cross-section of each noodle, created during the hand-stretching process, contributing to the distinctive light texture.
- Versatile serving: Excellent served cold (chilled with dipping sauce) or hot (in broth). Boiling time is approximately 7 minutes.
- Year-round enjoyment: Refreshing as cold zaru udon in summer; comforting as kake udon in winter.
How to cook
Bring a generous amount of water to a full boil (at least 1 litre per 100 g of noodles). Add noodles while loosening them gently. Once the water returns to a boil, reduce the heat slightly and cook for approximately 7 minutes. Drain, rinse under cold running water, and chill thoroughly before serving, or serve directly in hot broth.
