Himi Udon is a traditional specialty from Himi City, Toyama Prefecture, Japan, crafted by Kaizuya using a unique method that combines hand-kneading and hand-stretching techniques. The result is a noodle that achieves the rare balance of a firm, chewy bite and a silky-smooth texture.
This thick-cut variety (Futamen) is particularly well suited to long, slow cooking – it holds its shape beautifully without falling apart, making it an ideal choice for hot pots, braised noodle dishes, and curry udon. Its mochi-like elasticity and rich flavour develop further the longer it simmers.
- Firm texture that does not break down during prolonged cooking
- Strong chew and sticky, mochi-like elasticity
- Thick dried udon noodles – a rare style even within Japan
- Made by hand-stretching – a traditional artisan technique
- Recommended for: hot pot, braised udon, curry udon
Cooking instructions
Bring a large pot of water to a rolling boil (use at least 1 litre of water per 100g of noodles). Loosen the noodles and add to the boiling water. Once the water returns to the boil, reduce the heat slightly and cook for approximately 24 minutes. Drain into a colander and rinse thoroughly under cold running water to remove surface starch before serving.
Note: As these noodles are hand-stretched, a natural starchiness may appear on the surface during cooking. This is harmless – simply rinse well before eating.
