Himi Udon Extra Fine Noodles from Kaizuya – a specialty from Himi City, Toyama Prefecture, Japan. These noodles are stretched even thinner than the standard fine variety, delivering an exceptionally smooth texture and a silky, clean finish on the palate.
Kaizuya's Himi Udon combines the firm, springy bite of hand-kneaded noodles with the smooth glide of hand-stretched noodles – qualities that are traditionally difficult to achieve together. The unique production process creates tiny air pockets in the cross-section of each noodle, contributing to its distinctive mouthfeel.
- Serve chilled in summer for a refreshing cold noodle dish
- Enjoy warm as nyumen (hot noodle soup) in winter
- Versatile year-round staple
Cooking instructions
Bring a generous amount of water to a full boil (at least 1 litre per 100 g of noodles). Gently loosen the noodles and add to the boiling water. Once the water returns to a boil, reduce the heat slightly and cook for approximately 2.5 minutes. Do not overcook. Drain, rinse under cold running water, and chill thoroughly before serving.
