Kaizuya, a Himi udon maker in Toyama Prefecture
Kaizuya Co., Ltd. is a manufacturer and seller of Himi udon based in Kamiizumi, Himi City, Toyama Prefecture.
The company specializes in Himi udon, a local noodle tradition that has been passed down in the Himi area for generations.
Kaizuya describes one of its greatest points of pride as "the flavor the udon noodles themselves carry."
Rather than relying only on broth or toppings, its approach places the character of the noodles themselves at the center of the experience.
1975: The beginning of Kaizuya
Kaizuya's story began in March 1975 (Showa 50).
The business was founded under the trade name "Kaizuya" in Iseomachi, Himi City.
In July 1981 (Showa 56), it relocated to Yanagida, Himi City.
Several years later, in March 1988 (Showa 63), Himi Udon Kaizuya Ltd. was established.
A new headquarters and factory
In March 1994 (Heisei 6), Kaizuya moved its headquarters and factory to Kamiizumi, Himi City.
In November of the same year, Kaizuya Co., Ltd. was established as an independent sales company.
From there, the company continued to develop its business while keeping Himi udon at its core.
Opening Udon Chaya
In June 2010 (Heisei 22), Kaizuya opened "Udon Chaya," an antenna shop located on the grounds of its headquarters.
This created a place where visitors could experience Kaizuya's Himi udon directly in Himi.
Continuing the tradition of Himi udon
Since its founding in 1975, Kaizuya has continued to make Himi udon while preserving the traditional techniques associated with the region.
Behind those noodles lies a much longer story — one that reaches back to the Edo period and the neighboring Noto Peninsula.
